Black cod, also known as sablefish, is a deep-sea fish from the North Pacific prized for its rich, buttery, and melt-in-your-mouth texture, due to its high oil and omega-3 content. It is excellent for absorbing marinades and can be prepared by grilling, broiling, smoking, or poaching, with a classic preparation involving a miso marinade.
